      对脂酶在丙酮介质中催化香草醇和壬酸甲酯合成辣椒素酯的反应动力学进行了研究,以HPLC方法测定产物辣椒素酯的浓度,同时确定了反应初速度,采用双倒数作图分析法和产物抑制试验法研究了本合成反应的机制,结果表明,辣椒素酯的酶催化合成是按乒乓反应机制进行的。研究还确定了酶反应动力学方程和Vmax 、KmA、KmB的值,并对其进行了验证,结果表明动力学方程与试验结果拟合度达0.997。
英文摘要:
      The kinetics which synthesized capsinoids from vanillyl alcohol and methyl nonanoate by lipase catalysis synthesized in acetone was studied in this paper. The concentration of capsinoids in the reaction was detected by HPLC and the initial velocity of the synthesis reaction was calculated. The inhibiting test of product was carried out with methanol added. The results revealed that the enzymatic-synthesis reaction follows the Ping-Pang reaction mechanism.The kinetic equation with corresponding Vmax, KmA and KmB was inferred by the double reciprocal plot. The fitting degree of equation model arrives at 0.997 to compare with the experimental data.
